There are plenty of Southern staples that would be perfect for an easy brunch or lunch in honor of mom. Fried chicken, cheese grits, ham biscuits… the choices are limitless. Pimento Cheese would be required, in my opinion. Make a big batch to serve on sandwiches or on crackers.
